RECIPE: Birthday Mug Cake

Have your birthday cake and eat it too with this healthy, guilt-free celebratory treat!

Makes 1


1 scoop Switch Nutrition Protein Switch Vanilla
2 tbs (10g) coconut flour
1 tbs (15g) unsweetened apple sauce
2 tbs (30mL) unsweetened almond milk
1 whole egg OR 1 flaxegg (1tbs flaxseed meal + 1bs water)
1 tsp baking powder
1 tsp stevia
1/2 tsp vanilla extract
1/2 tsp butter extract (or real organic butter)
1tbs Sprinkles
Pinch sea salt


Combine all ingredients in a large microwave-safe mug and mix together until batter is smooth.

Stir in half of the sprinkles, then top with the other half remaining sprinkles.

Cook in the microwave for about 1 minute, or until cake is done. Be careful not to let the batter overflow.

Allow cake to cool a few minutes. Top with a candle (if you like) and enjoy!
