RECIPE: Healthy Easter Buns

Makes 8


3 cups (300g) almond meal
Pinch sea salt
1/2 tsp baking soda
1/4 tsp olive oil
2 tbs pure maple syrup
Zest from 1 orange
1 tsp vanilla extract
1/4 cup (80g) currants
1 tsp cinnamon
1 tsp all spice
1 tsp nut meg
2 eggs

1/4 cup coconut flour
1-2 tbs water

1/2 tbs coconut sugar
1/2 tbs water


1. Pre-heat oven to 180 degrees C.
2. To make the buns, combine all ingredients in a large mixing bowl and mix together until well combined.
3. Divide the dough into 8 portions and roll into balls.
4. To make the crosses, mix the coconut flour and water together in a bowl and pour into a piping bag. Using a knife, trace a + shape down the buns and pipe the flour mixture down the lines.
5. Place the balls on a baking tray (ensure they are not touching) and bake for approx 25 minutes or until a skewer inserted comes out clean.
6. To make the glaze, mix together the coconut sugar and water and paste the mixture over the buns.
7. Serve warm with a smear of organic butter or enjoy on their own.
