RECIPE: Chilli Beef

 

Serves 6

INGREDIENTS

500g lean beef mince
1 medium brown onion (120g), chopped
1 clove garlic
1 large red chilli
1 packet taco or chilli seasoning mix (35g)
1 can (400g) diced tomatoes
1 can (400g) red kidney beans
½ cup (120g) sweet corn kernels
½ cup (120g) capsicum, chopped
2 tbs (60g) jalapenos
1/3 cup fresh coriander leaves
200g taco sauce
Pinch of Salt & pepper
Fat free Greek yoghurt or Low fat Sour Cream to serve (optional)

 

METHOD

Spray a medium saucepan with cooking oil. Add the mince, onion, garlic, chilli and spices and cook, stirring until meat has browned.

Add the diced tomatoes, kidney beans, corn, capsicum, jalapenos, coriander, taco sauce, and season with salt & pepper. Bring to the boil then reduce to simmer, stirring frequently and cook until thickened.

Divide mixture between bowls and serve with a dollop of fat free Greek yoghurt or low fat sour cream and steamed brown rice.
